Learning isn't a one-size-fits-all process. At a neurological level, when you encounter new information, your brain activates multiple regions simultaneously. Your sensory cortex is processing what you see, hear, or feel. Your prefrontal cortex is making meaning of it. Your memory systems are deciding whether to keep it.
